A chat log (also chatlog, chat history or chat transcript) is the record of a Twitch chat: all public messages of a channel, exactly as they ran during the stream. chatlogs.de archives these logs day by day and makes them readable.
Twitch itself only keeps chat around briefly: open a stream later and the chat from back then is gone. chatlogs.de therefore archives Twitch logs permanently – sorted by channel and by day, with emotes, subs, raids and moderation actions, and readable without signing in.
